…this is DELICIOUS. Been having it with all my meals since test day. Am considering adding some crunch next time- NO PEANUTS, THANKS! No shade to all you peanut-lovers out there but it’s a bit overdone in the chilli oil realm and not very français. More here next week!

Did my first official test yesterday. 🌶️🌶️🌶️🌶️ It’s going to be a long road ahead to get the recipe down pat and standardised for product roll out. But there were some valuable lessons.

So what did we learn?

1. So-called dried shrimps are not actually 100% bone dry. As a result, they absorb a metric f*ck tonne of oil when placed into the wok. So, giving them a once over in the oven on low heat is a v good idea

2. Oven-dried shallots and garlic should be used on the day of.

3. Low heat is the key! Don’t overkill it with the temp or you’ll burn everything and waste a butt load of product.
